We live on the beach. And the beach doesn’t get any better than when we have the warm summer sunshine glistening on the shore.
We don’t just love summer because Bracklesham Bay fills with fun, ice creams and happy holidays! Our chefs get excited too, so we’ve compiled our favourite ingredients for summer tasting!
From the garden:
Cucumbers – simple yet delicious. We love ours dressed with soy, sesame and honey paired with a freshly grilled piece of Salmon.
Fennel – fresh, crisp and one of the staples when we slow roast it to unlock sweetness, paired with a grilled local fish straight from our village fishmonger.
Raspberries – just delicious at this time of year, and found in our cakes, our sundaes and atop our ice cream desserts!
From the sea:
Mackerel – humble, often underestimated but totally delicious when freshly caught and paired with a dressed summer salad and new potatoes
Crab – our Selsey Crab salads are truly a favourite at Billy’s. And for good reason. Teamed with salad from our local greengrocer, Munneries, freshly baked bread from our local bakery and boiled eggs.
Dover Sole – a favourite fish, and a favourite of ours. Grilled with capers, garlic and parsley butter is the favourite way our chef, Richard, serves his!
At Billy’s, we have seafood staples like Moules Frites and our world famous Fish & Chips on the menu all-year around, but our daily specials board is filled with fresh fish and shellfish straight from our local waters.
